The remains of Christmas dinner

Leftovers can be the most exciting part of Christmas. Even if you’re sick of the sight of turkey and have sworn to only eat celery until next Christmas, there are plenty of possibilities.

I love a cranberry sauce, stilton, lettuce and parsnip sandwich. Turkey is an optional addition. The sharp cranberry is great with the creamy stilton and the crisp lettuce is lovely after the rich flavours of Christmas dinner.

Here are a few recipes that make leftovers feel brand new:
